What is spatchcock chicken?
Spatchcock chicken is the process of preparing a whole chicken. Start by removing the backbone and flattening the bird to allow it to cook faster and more evenly.
How to butterfly a whole chicken?
1. Pat the chicken dry with a paper towel. Place the chicken with the breast side down on a chopping board over a sturdy work surface.
2. Use a sharp knife or kitchen shears (scissors) to remove the backbone of the chicken. Cut each side carefully until it is detached from the bird.
3. Then, flip the chicken so that the breast side is facing you. Use the back of your palm to press in between the chicken breast to break the bone and cartilage. This will help flatten out the chicken. Go ahead to season the butterflied chicken.

Ingredients you will need to make this whole chicken.
Whole chicken
Fresh herbs: coriander, thyme, rosemary, and parsley. You can use dried herbs if you don’t have fresh herbs.
Paprika
Garlic powder
Lemon zest
Oil - you can use olive oil or avocado oil.
Salt and black pepper to taste

Air fryer temperature varies depending on size, make, and model. My delicious cravings recipe time is subject to a preheated air fryer. If you are trying this recipe for the first time, deduct 2 minutes from the cooking time and increase it if needed to allow the food to cook evenly.
How to Cook Air Fryer Spatchcock Chicken
Preheat the air fryer to 180C/350F. In a small bowl, add your seasoning for spatchcock chicken. Place the chicken on a flat plate breast side and rub the chicken marinade all over it.
Place the chicken in the air fryer basket breast side down. Rub in the seasoning mix. Cook the spatchcocked chicken in the air fryer for 20 minutes. Flip and cook for another 15-20 minutes or until the internal temperature of the thickest part of the chicken registers 165F/74C.
Transfer the chicken to a plate and let it rest for 10-15 minutes for the juice to redistribute before carving. Serve with your favorite dish, and enjoy!

How to Store and Reheat
Allow to cool completely, and store leftover chicken in the fridge or freezer.
Fridge - put in an airtight container for up to 3 days.
Freezer - wrap well in parchment paper and put in a freezer bag for up to 3 months.
To reheat in the air fryer or oven for 5 minutes at 180C/360F or until hot.
Tips
- To get a crispy skin, increase the temperature to 200C/400F and then cook the chicken a little longer in the air fryer with the chicken breast-side up.
- You can marinate the chicken in the refrigerator for up to 24 hours or use it immediately.
- Do not overcook the chicken because it could get burnt the skin or dry out.
- Season the chicken however you like. Do not stick to the seasonings listed. Use onion powder or cayenne pepper.

Loved this recipe but......
It's hard to find a 1.3 gram chicken.
The recipe states serves four and is 101 kcal per serving. So an entire chicken is 404 kcal?
