Tips
- Allow the chicken to cook evenly throughout and for the panko to crisp without burning, it must be flattened. Use a rolling pin to pound or flatten it if you don't have a meat mallet or tenderizer.
- To ensure that the coating sticks to the chicken cutlet thoroughly, let it rest for 5 to 10 minutes before cooking.
- I recommend using vegetable oil, olive oil, or avocado oil. You can fill up a spray bottle with oil. Therefore, there are no additives.
- Season the chicken for 10 - 15 minutes to allow the ingredients to absorb into the meat. This "dry brine" will result in meat in juicy meat and crispy skin.
- You can use boneless skinless chicken thighs but take note that the cooking depends on the thickness of the chicken thigh.
- For the sandwich filling, you can also use lettuce or any vegetable of choice.
