Air Fryer Banana Bread

Banana bread can be healthy if you want. It depends on the ingredients you use; you can make some smart swaps to make your banana bread healthy by swapping all-purpose flour for whole wheat flour. Use more bananas and less sugar. Alternatively, swap the sugar for maple syrup or honey. Make the banana bread nut-free or chocolate chip-free.
You can make this no-egg banana bread without milk, and you will still get delicious bread. I used baking powder to act as the binding and raising agent for the banana bread. You can try dairy-free banana or eggless banana bread muffins; equally delicious and fluffy.
Ingredients and Variations
Self-raising flour: substitute with plain or whole wheat flour.
Baking powder: Please note, that this is not the same as baking soda.
Brown sugar: you can also use caster sugar or mix both.
Overripe mashed bananas: use those spotty bananas in your fruit basket.
Vegetable oil: Substitute with light olive oil, coconut oil, or any other flavorless oil of choice.
Mixed spice ground: cinnamon powder, coriander seeds, Nutmeg, whole cloves, pimento, and ginger.

Air fryer temperature varies depending on size, make, and model. My delicious cravings recipe time is subject to a preheated air fryer. If you are trying this recipe for the first time, deduct 2 minutes from the cooking time and increase it if needed to allow the food to cook evenly.
How to Make Eggless banana bread
Prep
- Measure the flour correctly. Use a kitchen scale to measure the flour instead of measuring cups. Remember, measuring cups vary slightly, but scale measurement stays the same. Combine the flour and baking powder and set aside.
- Prep the remaining ingredients; prepare the pan by greasing it with oil and line it with a baking sheet.
- Peel the bananas in a blender, add all the wet ingredients, and blend till smooth or mash bananas in a large bowl with a fork. Pour the vegetable oil, sugar (brown or caster sugar), and mixed spice and whisk to combine.
- Continue by using a spatula, folding the flour, and baking powder into the wet ingredients until combined. Do not overmix.
- Pour the batter into the prepared loaf pan and bake in the air fryer for 30 to 40 minutes or until a skewer or toothpick inserted into the center of the loaf comes out clean.
- Bring it out of the air fryer, and leave it to cool for a few minutes (about 10 minutes). Then, turn it onto a wire rack to cool it completely. Slice the banana bread and enjoy!
How to Store Air Fryer Banana Bread
Banana bread can be stored at room temperature. Keep it in an airtight container or cling film and place it in a cool place on a counter for up to 5 days.
Fridge: banana bread will last up to 4 or 5 days. Wrap in cling film (plastic wrap), foil, or in an airtight container.
Freezer: make sure the banana bread cools completely before storing it to avoid condensation. Slice it for convenience and wrap it tightly, individually in a cling film before placing it in a freezer bag. You can store it for up to 3 months.
Defrost at room temperature for a few hours or pop in the microwave for a few seconds or in the refrigerator overnight.

- I recommend blending the wet ingredients to get a creamy and smooth batter.
