Bell peppers: use any combination of colors that you like or substitute with sweet peppers (mini peppers). I used red bell peppers, green and yellow.
Onion: use any type of onion (red or white)
Paprika - smoked or sweet
Garlic powder or granules
Olive oil: substitute with any oil of choice. Avocado oil will work well.
White wine vinegar: optional (any vinegar will work for this recipe)
Salt and freshly ground black pepper
How to Make Air Fryer Bell Peppers and Onions
- Deseed peppers and slice them into thin strips (about 1cm thick).
- Peel the onion and roughly chop it to the same size as the peppers.
- Pour the sliced peppers and chopped onions into a large bowl. Season with paprika, garlic granules, salt and pepper, olive oil, and vinegar, and toss them to combine.
- Transfer the peppers and onions to the air fryer basket in a single layer, spread them out (do not overlap), and air fry at 180C/360F for 6-8 minutes. Shake the basket halfway through the cooking.
- Remove from the air fryer, serve, and enjoy this vegetable side dish!
How to store
Store leftovers in an airtight container in the fridge for 4-5 days. You can also keep frozen bell peppers for 1-2 months.
To reheat, place in the fridge overnight to thaw if frozen. Microwave for close to 1 minute or reheat on the stovetop.
